I think throwing out the anchor is a good description at just below 7000. The main jet was changed to a 130. I have all the original jets and I may go back to the stock settings for a starting point.

Without trying to sound too cavalier about your situation, just write
down where you began and start fiddling. If you make it worse, go the
other way. As long as you write down your starting point so you can get
back there if the whole project goes sideways, you're careful, and you
document what you're doing so you have a logical approach to the tuning,
you should be OK.
Now to brass tacks...I think the 3rd clip position is quite common for
the original CV carbs. How can you go wrong changing it and seeing how
it works?
In response to Antonio's comment, the bike's power curve does go flat
around 7500-8000 rpm, but it doesn't fall flat on its face or anything.
If you're feeling the bike go flat, that's normal...if it feels like you
threw out an anchor, that's not normal.
