Hi Kris
Engine failure after a lack of oil (or severere contamination happens in a few ways.
1. Plain bearing lining material is abraded away rapidly once the oil film breaks down. This can actually take some time, depending on the load on the engine. It will show up later as lower than normal oil presure (if the engine doesn't seize)
2. Roller and ball bearing galling of the balls / rollers and their races. This does not usually happen immediately and will often only happen once the engine temperature rises.
3. Accelerated piston skirt wear. This will usually have little effect on engine performance.
4. Ring and bore wear and scoring. This will usually happen once the engine temperature rises too high and will often be accompanied with a heat seize. This can be easily detected wit a compresion test if the engine still turns.
In your case, it seems like you stopped the engine in time. I would seriously not strip anything yet. Run the engine gently for a while, have the oil pressure and compresion checked and listen for odd noises. If all seems ok, goi for some short rides until you gain confidence in the engine.
If you blow it, buy a used engine - I have seen them on ebay for under $1000.
