Seems like I had this problem once and it was a faulty ground.

If the tach on your toy is electrical instead of mechanical then it is
basically a well dampened ammeter that measures square waves (all the
same size) triggered by one of your ignition circuits. If it works
fine on start up, with the idle speed indicated is at about the right
range on the dial I'd guess that the basic tach is OK but when you
start riding something is working loose. If the bike is starting and
running fine I doubt it is a problem with ignition or battery. You
could hook a separate tach to the feed from the ignition to see that
it is generating good triggers but it sounds to me like you need to
troubleshoot the wiring. Good luck, Moonbeam
