I've done it several times, and you can have a good experience if you're careful, a bad one if you're not. I'd say it's important who you get the bike from; if you know the person wasn't an idiot who abused his bike (I got a wrecked CBR600F4i with 2300 miles on it and a damaged second gear, with a high-level race exhaust, of course) and the bike is structually and mechanically sound, go for it. And of course, check your state's laws about salvage titles; some states you can clear the title (like FL, I think, which is why I would never buy a bike or car from FL), some states you can register the bike, although it forever is scalet lettered with the "SALVAGE" on the title document, (like CA), and some states, like MI (I assume from what Alex wrote) where you can only use it for parts or off-road use.
 
Just remember, insurance companies sell the bike to the salvage yard for 1/4 Blue Book, so don't pay too much!

I did once wouldn't do it again. I never could get the title cleared here in
Michigan. I ended up getting a builders title.
