Funny, I bought an '03 620 from Hattar for my wife's birthday, also a demo bike, except ours has a small dent from a wayward test ride. I was working there at the time and got a deal so good Bill Dansky couldn't sleep for a week. Ha!
 
Anyway, I've noted a very long warm-up with our bike, as long as you noted. As to fuel economy, I'm going to assume the bike is stock, but check the gearing! If it's different than the stock gearing, that could explain, it. If you're an aggreesive rider, as in only riding in town (especially if you live in San Francisco, which might be the best place in the USA to be a Monster owner!), you could also see "only" 35 mpg, which is average for an aggressively ridden motorcycle.
 
Otherwise, go see Todd at Hattar, he is actually a pretty good diagnostician. If there's anything wrong with your FI system, he will find it.

Hello,
I've recently purchased an '05 Monster 620 that was used at a press day (it
had 800 miles on the engine), but sold to me as new from Hattar Motor
Sports.  The engine is taking a LONG time (6-9 minutes) to warm up and get
out of the "low" temp range.  I imagine I'm using some gas during that warm
up period, but even so, on open roads, I'm getting only about 35mpg.  
Curious, given this info - is this warm-up time/mileage per gallon common?

Also, I'm new to the forum - not sure if you post all inquiries & how to
figure out when/if I'm getting responses?
