Not necessarily true, one has to (gasp) actually read the policy fine print to know.  The last time I took an insured bike to the track, I did bother to read my policy and it stated that comprehensive damage acquired during "competition events" were not covered.  I asked my agent and he stated that non-competitive closed course events (i.e. trackdays) were covered.  I didn't ask what sort of documentation would be required to support a claim though.  

That said, the several month delay you refer to may cause problems.
